If I had to choose one thing to eat the rest of my life it would be chicken. For one of the many reasons you see here—chicken parmesan. This comes together easily and the best part, the leftovers are even better.
School is around the corner and I’m already missing my boys just thinking about how there will be no pool time during the day, beach time will be limited to the weekends and just general hanging out will now be relegated to the end of the evenings and weekends. I’m all about fast and easy lately. The end of summer is closing in on us and my boys are determined to make every day count.

I’m all about summertime shortcuts. Beef enchiladas are a regular thing in my home, but beefy enchilada melts are a new found favorite.
There’s no rolling, no baking—which means almost no waiting—a good thing when the boys come back from the pool. Seriously, if I don’t have something ready, pronto!, chips, Oreos and anything else that can be snacked on turns into a meal in under 10 minutes.Read More Post a comment (62)
