I figured it’s the end of January, so we can now get back into our routine of drippy, gooey, cheesy meals that are perfectly suitable for lunch, dinner and even breakfast if you throw an egg on it. Oh heck, throw an egg on it at any meal and it instantly punches this sandwich up a notch.

Yeah, I know, salad. But at least it’s one that’s full of goodies. And after all it’s January, so I know many of you are doing detox, roll-backs, restarts, resets  . . . dare I say diets? Many of you know I don’t believe in diets. It’s all about moderation to me.

Sure, they might not seem like the sexiest dish. They weren’t when I was growing up.  But as an adult, I’m finding a new love for them. They’re easy to make and you can keep them on the cheap or get fancy like the one night Naomi slipped creminis into a batch and didn’t tell me until afterwards—she knows I hate mushrooms.
