This is a fun take on the classic BLT and an idea my kids are very into! You can imagine the possibilities. The idea works on any sandwich variation. It’s perfect if you need a new and fresh way to riff sandwiches for a gluten-free and paleo variation. The only one that I’ve yet to try, but I don’t actually think it needs to materialize is a PB&J variety that my little guy thinks would be awesome, but I find completely inedible.

My little guy said, “We have to try it”. He thinks it will be just fine if we remove the yolk. Naturally Naomi encouraged him by suggesting we swap out the everything bagel seasoning for crushed granola. It still sounds gross to me. But keep an eye on my Instagram story because it will be making a debut there with him biting into it live to capture his reaction.

You can use a hard boiled egg or even an over hard egg will work. 

How long should I boil the eggs for this Bun-less Everything BLT Egg Sliders?

For this recipe, the best consistency is a soft boiled egg that cooks for 7 to 8 minutes. Use an egg that is creamy, but not jammy or the yolk will spill out  the moment you cut into it. But you also want to avoid a hard boiled. Although the latter of the two would be better, so don’t worry if you over cook the eggs.

How do I keep this bun-less egg slider sandwich from tipping over once it’s made?

Be sure to level one side of the halved egg by cutting the bottom, so it can lay flat so it doesn’t tip over once assembled.

Ingredients

  • 3 tablespoons Everything Bagel seasoning
  • 6 soft boiled egg, halved lengthwise
  • green leaf lettuce
  • 6 cooked bacon slices broken apart as needed to fit length of egg
  • 1 roma tomato, sliced
  • 1/2 avocado, peeled and sliced
  • *Optional: chives cut to 1-inch pieces
  • salt and pepper

Instructions

Place everything bagel seasoning in a bowl. Level on half of each halved egg, so that it can sit flat. Dip each half in everything bagel seasoning until covered. Layer leveled halved side with lettuce, tomato, bacon, avocado and chives if using. Salt and pepper to taste. Serve immediately.
