We’ve all been told over and over and again about how breakfast is the most important meal of the day, so I thought I would inject some fun into this dish.

And as expected, it was a hit. Cole couldn’t believe I was giving him Doritos for breakfast. What he missed was that this dish was pumped full of other good things, like homemade salsa, black beans, a fried egg and some avocado. But then again, kids don’t really care about the details, at least mine don’t. Give them a hook and they’re in and the rest just needs to taste good. And it must have been really good because he requested the same thing for his after school snack.
Sure, stroke my ego, son. I’m a sucker. He got this and an Icee. And I got the “you’re the-best-dad-ever” hug.

Trashy Huevos Rancheros
Ingredients
- 10 Doritos chips
- 1/3 cup black beans
- 2 tablespoons cheese
- 3 tablespoons fire roasted salsa
- 1 fried egg
- 1/4 avocado, sliced
- chives, cilantro for garnish
Instructions
- Line oven safe bowl with Doritos, layer with black beans and cheese. Transfer bowl to a 350 degree F oven to melt cheese. Remove from oven and spoon salsa on top. Fry egg in a skillet and then place on top of salsa, Place slices of avocado into bowl and sprinkle with chives and cilantro
