Are you ready to show your grill who’s boss? When it comes to grilling, it seems, there are two camps. The people in the first love it, master it, and want to share it, while the people in the other are scared of it and just plain don’t get it.
I was in the latter for many years, but now I’m in the former. Like most things in life, it takes PRACTICE. But what if I told you that there was a grill that could expedite your journey from beginner to expert in half the time?
I got your back on this one. Grilling is about temperature and technique. Get that right and you’ll be grilling through the summer like I do now.
To start, let’s talk equipment. You don’t need to spend a lot, but you do need something reliable. I love my Pit Boss Memphis Wood Pellet Grill. It’s an all-in-one gas grill, charcoal grill, and electric smoker. And it’s available exclusively at Walmart! Since it has three cooking methods in one, I made the dinner you see all outside using this grill.
I started by boiling the potatoes on the gas grill while giving the chicken a quick sear on the charcoal grill to lock in the moisture. Then I transferred the chicken to the smoker to finish it because I like the smoky flavor, but more importantly, because the wood pellet grill cooks more evenly and isn’t prone to hot spots or flare ups. While the chicken was smoking and the potatoes were boiling, I started the pesto and then put the potatoes on the gas grill for a crispy finish. I may never eat potato salad any other way!
