Waffled Vegetarian Breakfast Sliders ~ A classic breakfast sandwich redone and modernized to add to your plant-based recipe collection.
Give me a good breakfast sandwich and it’s likely to pop up and repeat itself as lunch or dinner. Give me breakfast sliders like this and the kids will be running to the table each time. Although, the kids prefer their sliders layered with cheese and sometimes there’s a request for a layer of eggs. For the variation here, I kept it strictly vegetarian. I layered it with a waffled potatoes (for the bun), Pure Farmland breakfast patties (but any brand will work), tomato, avocado and green leaf lettuce.

Can I uses something other than a baked waffled potato for the “bun”?
If you are looking to keep the “bun” veggie based, waffled sweet potatoes work great or even sliced and baked sweet potatoes. Any type of pliable lettuce works well as a wrap. A couple that I personally like are green leaf lettuce and butter leaf lettuce. Sweet bell peppers are great for added crunch and dimension.
What spreads should I use?
Anything works here. To keep it simple you can give this a quick schmear of mayonnaise. But what this is where you can quickly and easily add in a lot of flavor, so most days I like a little chipotle mayonnaise. On days when I want a little kick, a Sriracha mayo works really well.
Which topping works well?
I always like a little slice of tomato because it gives the whole ensemble a juicy bite with a hit of brightness. Avocado adds some creaminess and the lettuce lightens and balances the savory saltiness of the waffled potatoes.
What kind of vegetarian breakfast patty should be used?
Any brand will work. I like Pure Farmland for the texture and flavor.

Place a cooked waffle potato on a working surface. Layer with a breakfast sausage patty, green leaf lettuce, 1 tablespoon of mayo or preferred spread, tomato and avocado slices. Top with second potato waffle. Repeat with remaining ingredients. Serve immediately.
