Sweet and Savory Crostinis

With the Super Bowl just around the corner, I figured we should start planning. Let’s start with some light bites and incorporate some super foods, because face it, you know on the flipside there is going to be a good share of ooeey-gooey cheesey madness. For today, I’m covering the healthier bites like these sweet and savory crostinis.

To keep things simple I made a whipped cottage cheese since it’s a great canvas for flavoring while being packed with protein and low in calories. From there, I did a lot of mixing and matching. Of course, you can always use a whipped goat cheese, cream cheese or any other base for layering. Just remember, you need some sort of “schmear” on the bottom or the crostini will be too dry.

From there, layer as you like, I kept my combinations simple with these:

  • Pear, Roquefort and Walnut
  • Salt and Pepper Eggs with Pesto
  • Mixed Berry with Pineapple Jelly
  • Basil & Tomatoes with Pesto
  • Bananas & Honey with Peanut Butter and an Almond Sprinkle
  • Avocado & Crushed Bacon with a Sriracha Drizzle

There’s no recipe with this post, mix and match to your preference—just remember, you’ll need a good hearty toast that won’t get soggy and will stay crunchy. As part of Old London’s 2015 New Year, New Recipes Celebration, I used Old London Melba Toast. And for the “schmear”, whip 1 1/2 cups of cottage cheese in your blender or food processor. This makes enough for 2-3 dozen crostinis.
