Speaking of kids, I’m keeping this short, because they are pulling at me now to go swimming . . . again. How can I say no? We have less than a month before school starts, so I’m trying to get in as much kid activity before they start another year of being closer to leaving home. Wah.
Yield: Makes 8-10 Popsicles
Summer Fruit Pops

Ingredients
- 1 1/2 cup pineapple
- 1 cup coconut water
- 1 cup plain greek yogurt
- 1/2 cup red dragon fruit
- 1/2 cup strawberries
- 8 raspberries
- 4 kiwis, chopped
Instructions
- Blend the first three ingredients. Remove 1/2 of mixture; set aside. Add red dragon fruit and strawberries, blend until combined. Pour both mixture in a measuring cup with a spout for easy pouring. Pour and layer mold with pineapple and dragon fruit mixture. Add in fruit.
- Insert popsicle in center of each well. Transfer to freezer for 6-8 hours. (Time will vary according to freezer setting and how full freezer is).
- To release popsicles from well, run hot water on the outside of popsicle for 2-3 seconds. Remove popsicle and serve immediately.
Thankfully when we are done there will be freezer full of these, because it will buy me just enough quiet time as they lick their popsicles for me to catch my breathe.
