Tomorrow is the last day of school for my boys, so of course it’s time to celebrate another successful school year. By celebration I meant dinner at their place of choice and some boozy popsicles for me.
Because, hey why not. Taking a break from the mad rush of school pick-up and drop-off is something to celebrate, right?
How’s that saying go . . . celebrate the small things in life? Yep, got it, doing it and loving it. Yay to the season’s first batch of boozy popsicles. Stay tuned for more to come through the next few weeks.
- 1lb strawberries, hulled
- 1 small jalapeno, finely diced
- 3-5 tablespoons sugar
- 1½ cup lime juice
- ¾ cup gin
- In a wide shallow bowl with a flat bottom, mash strawberries and jalapeno. Add strawberry mixture and sugar into a medium saucepan, over medium high heat, cook and stir until boiling. Let boil, while continuously stirring, for 2 minutes. Remove from heat and let cool completely. Once cooled stir in lime juice and gin.
- Pour mixture into popsicles mold. Cover top of mold with foil and puncture a hole in the center of each well, insert popsicle stick. Chill for at least 4-6 hours, or overnight. *Freeze time will vary according to your freezer setting and how full it is.
