Strawberry and Jalapeno Gin Smash Popsicles

Tomorrow is the last day of school for my boys, so of course it’s time to celebrate another successful school year. By celebration I meant dinner at their place of choice and some boozy popsicles for me.

Strawberry and Jalapeno Gin Smash Popsicles

Strawberry and Jalapeno Gin Smash Popsicles

1lb strawberries, hulled 1 small jalapeno, finely diced 3-5 tablespoons sugar 1 1/2 cup lime juice 3/4 cup gin

Ingredients

  • 1lb strawberries, hulled
  • 1 small jalapeno, finely diced
  • 3-5 tablespoons sugar
  • 1 1/2 cup lime juice
  • 3/4 cup gin

Instructions

  1. In a wide shallow bowl with a flat bottom, mash strawberries and jalapeno. Add strawberry mixture and sugar into a medium saucepan, over medium high heat, cook and stir until boiling. Let boil, while continuously stirring, for 2 minutes. Remove from heat and let cool completely. Once cooled stir in lime juice and gin.
  2. Pour mixture into popsicles mold. Cover top of mold with foil and puncture a hole in the center of each well, insert popsicle stick. Chill for at least 4-6 hours, or overnight. *Freeze time will vary according to your freezer setting and how full it is.
