Old Fashion Mac & Cheese with a Simple Tomato Salad

If you are anything like us, weeknight dinners are a daily topic of conversation around here. With three hungry and growing boys in the house, it’s not easy! From the 4 year old with a sweet tooth, to our adventurous 11 year old, to our extremely picky 17 year old, deciding on something that makes everyone happy is always a challenge. While Naomi and I are constantly cooking, baking, shooting, writing, all the while doing social media, time is a commodity and we wish we had more of it!

While I wish I could say we cook homemade meals for the boys every night, that is so not reality. Naomi and I are in the kitchen most days, so by the time dinner rolls around, making something from scratch is really the last thing we want to do. And while eating out is always fun, it’s not always convenient or the healthiest choice. Not to mention it gets expensive! Enter a time-saving hack I recently discovered – Blake’s All Natural Foods. And I’m so happy I did!

Not only do these all sound delicious, but it’s so nice knowing that on those crazy weeknights, we can spend less time preparing dinner and more time enjoying dinner, together as a happy family.

Simple Tomato Salad

Ingredients

  • 1 lb. Heirloom tomatoes
  • 8 oz. snacking tomatoes
  • 1/2 cup olive oil
  • 2 teaspoon sugar
  • 1 teaspoon honey
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon ground pepper
  • 1/2 cup finely chopped tarragon
  • 1/2 cup finely chopped basil
  • 1/2 cup finely chopped parsley

Instructions

  1. Toss all ingredients in a bowl. Serve immediately.
